The warm and dry 2007 vintage was ideal for late-ripening reds. Harvested in early November, 65% off the Old Block, 35% from the Young Block at our Queentson Rd. Vineyard in St. David’s Bench. The grapes came into the winery at an average of 24° brix. Small batch fermentation occurred in one tonne bins with manual punchdown of the cap, followed by malolactic fermentation in barrel. Individual barrel assessment resulted in the selection of a blend featuring 100% French Oak, 60% new, remainder 1 yr old and neutral barrels. The 2007 Reserve spent 31 months in barrel, giving it depth and maturity despite its bottle youth. Hold it until 2012 and delight in it until 2020. Only 364 cases produced.
