The winemaking department had to opportunity to source a variety not in its product matrix from a unique vineyard parcel in the Lincoln Lakeshore sub-appellation on the western end of the Niagara Peninsula. The decision was made to produce an experimental batch of Gewürztraminer.
The Gewürztraminer grapes were harvested on October 2nd 2013 from the Stouck vineyard in the Lincoln Lakeshore appellation. The grapes were crushed and the juice was left in contact with the skins for 7 hours before the pressing began. The juice was slowly fermented in stainless steel tanks at cool temperatures.
The wine was left to age in a small stainless steel (aka ‘Mini-Me’) to preserve the delicate aromatics and spicy character of the Gewürztraminer without the influence of oak barrel. Bottled June 19th, 2014.
