Making Sauvignon Blanc fruit into sparkling wine is an interesting proposition, in that we pick our savvie on flavour rather than numbers like Brix or acidity. The growing season in 2016 seemed like one endless dry heatwave, meaning that we had some serious giddy-up to get our Backyard Block fruit off the vine in early September before it over-ripened. We chose the Charmat (tank) method of secondary fermentation to make our Backyard Bubbly 2016, as that technique allows for better preservation of the fresh fruit flavours that we cherish and strive for.
